
Ingredients:
1 whole chicken (cut into pieces)
2 medium onions (finely chopped)
3 garlic cloves (minced)
1 preserved lemon (cut into wedges)
1 handful of green olives
2 tablespoons olive oil
1 teaspoon ginger
1 teaspoon turmeric
½ teaspoon black pepper
¼ teaspoon saffron (optional)
Fresh parsley & cilantro (chopped)
Salt to taste
Instructions:
Heat olive oil in a tagine or a pot, then sauté the onions and garlic until soft.
Add the chicken pieces and spices, and mix well.
Pour in a little water, cover, and let it simmer on low heat.
When the chicken is almost cooked, add the preserved lemon and olives.
Let it cook until the sauce thickens.
Garnish with fresh parsley and cilantro, and serve hot.
Tips:
Use authentic preserved lemons for the best flavor 
Cook slowly for a richer taste
You can add potatoes to make it more filling
